Why buy big?

If you love grass-fed beef that’s finished with a touch of homegrown goodness, our whole and half cow options could save you a lot of money. A whole cow purchase can save upwards of $1000 the cost of purchasing the same weight of beef in individual cuts over time. Our bulk prices are extremely low, and a walk to the freezer is much quicker than a trip to the grocery store.

Where will my beef come from?

Nieslanik Beef’s whole and half cow sales all come from grass-fed cattle born on Nieslanik Ranch each winter and spring. Our cattle spend the summer season grazing the high country above Carbondale, CO. They come home happy and healthy each fall. They are full sized and ready to go after their second summer in the high country. We finish them at home on the ranch with a unique mixture of homegrown grasses and grains.

Pricing

Our pricing is based on the hanging weight each cow. Hanging weight is the weight of the cow as it hangs in the butcher's cooler once the head, hide, feet, organs and blood are removed. For our cattle, hanging weight averages 800 pounds but varies by individual cow. We charge $8.99 per pound of hanging weight. An individual cow's hanging weight, and the final price, are determined at processing.

To reserve an order, we ask that customers pay a deposit of $300.00. The deposit is a down payment toward the total cost. Total costs vary by cow but average $7,500 for whole cow and $3000 for half cow.

Each customer’s final balance is determined at the time of processing. The final balance is the difference between the hanging weight based price (at a rate of $8.99 per pound), and the deposit previously paid. The final balance must be paid prior to, or at the time the beef is picked up.

What’s included?

We offer customized whole and half-cow purchases. Our prices include all processing and butchering into individual cuts (see cut list). Individual cuts are packaged (cryo-wrapped), USDA inspected, and frozen. A Nieslanik team member will contact each customer to optimize their order based on the cut list and selected options.

Please be aware of the following:

Several premium cuts of beef come from the same parts of a cow. Depending on what cuts you are looking for, you may be faced with an either/or decision. Nieslanik Beef will help you understand the options.

Quantities and availability of specific individual cuts will vary from cow to cow.
